LOCAL, VEGAN
Coulee, is our newest item, and it is a single varietal that that features French lentils. The name in French means "to flow". We see this one as a really complete and wholesome protein. It tends to taste like the earth, light peppery notes, and nuttiness that really comes out in the fermentation process.
Our tempeh is made with regionally-sourced, non-GMO beans, fermented by Rhizopus oligosporus (a mushroom culture) to form a nutrient-dense protein packed with flavor and a bold texture. Though it satisfies all diets, our product is naturally probiotic, gluten-free, soy-free, and vegan.
The flavor and texture of By The Brook Tempeh is completely unlike that of commercial tempeh, which is typically made from pasteurized soybeans, highly processed, and shipped hundreds to thousands of miles.
We make our tempeh fresh from alternative legumes and grains, inoculated with a high quality spore, resulting in a highly digestible, nutritious option for your personal health. We stand behind community health, too, sourcing regional ingredients and distributing exclusively to our local community.
