Brussel Sprouts are little baby cabbages that grow up a tall stalk. The whole plant is edible including the sprouts, the leaves and even the stalk. They are high in fibre and nutrients but most of all they are delicious. They are difficult to grow in NC so we don't have them every winter, but when we do, get them quickly as they sell out fast.
